Causing a little controversy baking a mozzarella within a dark chocolate brownie pudding, but it's really just a take on a cheesecake. Mozzarella is creamy with marinated in honey. It also took us a while to perfect as Mozzarella is pretty wet so it meant our first bakes went soggy. We sorted this to create a stringy middle.

This has become one of our most popular brownies of the year, the cherries are dried slowly in out oven first to ensure the brownie is not too soggy. It intensifies the cherry flavour, it has a similar effect to sun-blush tomatoes. Cherries that are still juicy but not full of water, a concentrated flavour.

We're all about technique at brownie heaven and this one involves a little of that. We have to brown the butter first and we do this in our oven as we can set a temperature and time so that we don't burn it. The butter creates more of a butterscotch flavour in the blondie similar to caramac when combined with white chocolate. A

we were bowled over how popular this was this Christmas, we were fully booked but could have sold more than double. We think maybe we should experiment with different fillings all year? Particularly Pistachio Cream??

The list would not be complete without cookie dough, Cookie Dough is now the biggest sellet on our site. It must be the fact that our cookie dough is all butter, no palm fat, which makes it creamy and buttery.  This one features an almond blondie halved and spread with raspberry jam on top and bottom then stuffed with almond and cherry studded cookie dough. Topped with white chocolate and another cherry. It's a picture of beauty.
